Are we going to cook her to make delicious hominy that sweetens our mouths and warms our hearts? Here I share this recipe for sweet hominy with peanuts and grated coconut that is all good! The preparation is very simple, done in the pressure cooker and then in the common pot. The result is hominy rich in flavor and texture for you to enjoy after a meal.

In this case I prepared my hominy with yellow corn, but you can use white corn if you prefer. The difference between preparing hominy with yellow corn or white corn is only in the flavor, yellow corn has a more striking flavor. The hominy with white corn is called mugunzá.

Ingredients for making sweet hominy with peanuts:

 500 grams of yellow corn for hominy

 500 milliliters of coconut milk

 3 cups of sugar (480 grams)

 100 grams of grated coconut (1¼ cups)

 1 box of cream (I used lactose-free)

 300 milliliters of milk (I used lactose-free)

 300 grams of roasted and ground peanuts

 1 pinch of salt

 2 cinnamon sticks

How to make sweet hominy with peanuts:

Place the moisturizing corn in filtered water for at least 12 hours. That way you make sure it stays soft.

Tip: The amount of water should be enough to cover all the corn.

After the minimum 12 hours, drain the beans and place to cook in a pressure cooker with the cinnamon and more filtered water until covered. In the meantime, roast the peanuts, grind and set aside.

Tip: You can roast the peanuts in a skillet or pan without oil or in the oven. It will be at the point when it changes color and starts releasing its scent.

When the corn kernels are very tender, transfer them to a larger pot. Add the remaining ingredients: coconut milk, roasted and ground peanuts, sugar, grated coconut, milk, cream and a pinch of salt.

Mix all the ingredients together and simmer for 5 minutes or until this sweet hominy with peanuts is creamy just the way you like it. After turn off the heat and wait for it to cool a little before serving.

Tip: Remember that hominy becomes thicker after cooling.
